Take advantage of the strawberry season with this simple, Strawberry Summer salad recipe. It’s the perfect balance of savoury, sweet and zingy! (suitable for vegans) #strawberries #strawberry #lovelocal

Ingredients (serves 2) Handful of rocket and baby leaf spinach
10 Cherry tomatoes sliced in half
Packet of fruity couscous Dollop of hummus Handful of olives (optional) Sun-dried tomatoes (optional) Avocado, sliced
Handful of strawberries - chopped
Salad Dressing
Three tablespoons extra virgin olive oil, 1 tablespoon of balsamic vinegar.
Method
Place the rocket and spinach in your bowls, followed by a few tablespoons of couscous, a tablespoon of hummus, cherry tomatoes, olives, sun dried tomatoes, sliced avocado and strawberries.
Drizzle some of the dressing over the salad (to your taste).
The balsamic vinegar brings out the beautiful colour of the strawberries, and truly enhances their flavour.
